I wasn’t planning on making anything fancy last week.
It was one of those days — homework spread across the table, laundry still warm in the dryer, and me wondering if dinner counted as “done” if it was just reheated leftovers.

Then I remembered something my mother used to make when unexpected guests came over — a sweet little trick she could pull together with barely any effort: Graham Cracker Toffee.

It starts so simply…
A layer of graham crackers, a quick butter-brown sugar mixture bubbling away on the stove, a shower of pecans, and just enough chocolate to make you feel like you really made dessert.

The whole thing takes 10 minutes in the oven, but here’s the warning:
Once it’s cooled and broken into pieces, it has a way of… vanishing.
In my house, I’ve seen my kids sneak back for “just one more piece” three times in an evening — and my husband’s not much better.

I think that’s the beauty of it.
It’s the kind of recipe that feels like you put love and effort into it, but really, you just made something good without overthinking.

Here’s how:

GRAHAM CRACKER TOFFEE

Graham Cracker Toffee

Ingredients

  • 2 sleeves graham crackers

  • 1 ¼ cups butter (2 ½ sticks)

  • 1 ¼ cups brown sugar

  • 2 ½ cups chopped pecans

  • 1 teaspoon vanilla extract

  • ¾ cup mini semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F.

  2. Arrange graham crackers in a single layer on a parchment-lined or silicone mat–lined baking sheet.

  3. In a medium saucepan, melt butter over medium heat. Add brown sugar and cook until bubbling. Boil for 2 minutes, stirring constantly.

  4. Remove from heat, stir in vanilla and chopped pecans.

  5. Carefully pour the hot pecan toffee over the graham crackers and spread evenly with a spatula.

  6. Bake for 10 minutes.

  7. Remove from oven, sprinkle with mini chocolate chips.

  8. Let cool for 1 hour or until firm, then break into pieces.

If you make this, you might want to set a few pieces aside for yourself. Trust me — they’ll be gone before you know it.
